Levy UK + Ireland has agreed a long-term extension to its catering partnership with the Edinburgh International Conference Centre, taking the relationship through to 2032.
The sports and hospitality division of Compass Group UK & Ireland has provided food and hospitality services at the EICC since the venue’s inception in 1995.
The catering operation is now known as EICC Nourish and will continue to manage food and beverage services across conferences, corporate meetings, exhibitions, concerts, shows and other events.
The 27-strong team caters for tens of thousands of guests each year at the Edinburgh venue, which can accommodate events of up to 5,000 people.
Sustainability and regional sourcing will remain central to the extended partnership.
EICC Nourish works with Scottish suppliers and incorporates regional produce including wild venison and smoked trout into its menus.
The team has also moved from European flour to Wildfarmed Flour, produced using regenerative farming methods.
Food waste is managed in partnership with Olio, with surplus food made available for redistribution within the local community rather than being discarded.
EICC Nourish has also developed its approach to sustainable event catering through carbon-conscious menu design.
The operation provides delegates with carbon footprint information for menu items, while clients can receive post-event impact reports covering areas including catering choices and delegate travel.
Much of its produce is sourced locally or within Britain, with the team also working with independent suppliers including Cold Town Brewery in Edinburgh and Modern Standard Coffee Roasters in Fife.

The EICC has hosted a wide range of international conferences and events since opening.
These have included the TED Summit, which brought delegates from 84 countries to Edinburgh, alongside The Hunter Foundation Dinner featuring former US President Barack Obama.
The venue has also hosted the British Business Awards on two occasions.

The extension continues one of Levy’s longest-running venue partnerships and will see both organisations develop the EICC’s food, drink and hospitality offer over the coming years.
