GAIA Mayfair has unveiled The Bar at GAIA, the brand’s first standalone cocktail bar concept globally and a new evolution of the GAIA experience in London.

Located on the first floor above the restaurant, The Bar at GAIA introduces a new dimension to the brand, placing the same level of care, creativity and attention on the drinking experience that has defined its Mediterranean dining offer.
GAIA has built its reputation around Mediterranean hospitality, culinary craft and bringing people together around the table. The new bar marks a natural next step for the brand, extending its philosophy into a dedicated cocktail-led setting.
Rooted in the same values of simplicity, generosity, quality and emotional hospitality, The Bar at GAIA offers a fresh perspective on the Mediterranean approach to living, combining cocktail craftsmanship, atmosphere and personal service.
Designed for London’s evolving hospitality landscape, the bar responds to growing demand for destinations that connect dining, drinking, culture and nightlife.
Open daily from 4pm, the space is designed to create a natural rhythm throughout the day and evening, from pre-drinks and post-dinner gatherings to industry meet-ups, music-led nights and transitions into NYX and the late-night scene as the evening unfolds.
The launch also introduces a new cocktail menu, A Modern Vision on Traditional Craft.
Each cocktail has been designed to celebrate the natural character of its ingredients, combining considered technique with contemporary expression.
Seasonal produce, refined textures and understated presentation define a menu that mirrors the philosophy found within GAIA’s kitchen.
Honouring the bar’s journey to date, four guest favourites will remain as Legacy serves, preserving familiar signatures while introducing a new generation of cocktails shaped by a refined vision of contemporary cocktail culture.
Beyond the drinks, The Bar at GAIA is defined by a series of carefully considered moments. The journey upstairs forms part of the experience, while music evolves naturally throughout the evening and hospitality is designed to feel personal, intuitive and familiar.
Every cocktail is approached with precision, balance and purpose, strengthening GAIA’s wider position as a hospitality brand built around atmosphere, culture and connection.
As London’s first dedicated standalone Bar at GAIA, the opening marks more than the launch of a new venue. It signals the evolution of the GAIA world into a complete hospitality experience, where dining, drinking, atmosphere, culture and human connection co-exist under one philosophy.
