Pasture Restaurant Group has announced plans to expand into Manchester with four new food and drink venues at the St Michael’s development, through a partnership with Relentless Developments and Salboy.

The independent hospitality group, founded by chef-owner Sam Elliott in Bristol in 2018, will introduce four distinct concepts at the city centre development, expanding its operations beyond its established locations in Bristol, Cardiff and Birmingham.
Pasture Manchester will occupy a flagship ground-floor space within the development’s 43-storey tower, introducing the group’s established approach to open-fire cooking, premium beef and in-house butchery to the city.
Alongside the restaurant, Pasture will operate W Lounge, the hotel bar within W Hotel Manchester, and Abercromby, the historic pub being restored as part of the wider St Michael’s development.
The fourth venue, Terrace, will provide an outdoor dining space alongside the pub, serving a Mediterranean-inspired all-day menu.
The announcement represents a significant expansion for Pasture Restaurant Group, which has developed a portfolio of restaurants, bars and food retail operations since opening its first restaurant in Bristol in 2018.
The group opened Pasture Cardiff in October 2020, subsequently adding Parallel, a small-plates restaurant specialising in live-fire cooking, and Nightshade cocktail bar.
In Bristol, its portfolio has expanded to include Radius, Prime by Pasture and Pasture Butchers, while Pasture Birmingham opened on Colmore Row in June 2024.
International expansion is also underway, with the group’s first overseas restaurant, Pasture Barcelona, currently under construction in Spain.
Across its venues, the business focuses on ingredient sourcing, in-house butchery and cooking over fire. In 2023, Pasture achieved the Sustainable Restaurant Association’s highest three-star Food Made Good rating, recognising its approach to sourcing, society and the environment.
Sam Elliott, Chef-Owner of Pasture Restaurant Group, said:
“Manchester is a city we’re hugely excited to become part of. It has a strong independent spirit and a brilliant hospitality scene, and St Michael’s gives us the opportunity to bring Pasture here while developing something new for the group.
“We’ve grown from one restaurant in Bristol by putting the food, the team and the guest experience at the heart of each opening. That approach will carry through all four Manchester venues, with each having its own identity.
“Pasture Manchester will bring the open-fire cooking and hospitality people know us for, while Abercromby, Terrace and W Lounge give us scope to work across different settings and occasions. It’s a significant next step for us, and we want to create places that people in Manchester will return to again and again.”
The four venues will form part of the second phase of St Michael’s, a major mixed-use development in Manchester city centre being delivered through a joint venture between Relentless Developments and Salboy.
The development includes a 162-room W Hotel and 217 W Residences, alongside commercial and hospitality facilities.
The wider St Michael’s scheme has already attracted several established hospitality operators, including Big Mamma Group’s Circolo Popolare, Chotto Matte and Grind.
Gary Neville, Director of Relentless Developments, added:
“When we started St Michael’s, our ambition was to create a destination in the heart of Manchester that genuinely reflects the energy, confidence and character of the city. Pasture is exactly the kind of operator we want to attract. Sam and his team have built something special, and bringing four distinct concepts into the scheme will add another layer of quality and personality to what we’re creating here.”
The agreement will see Pasture Restaurant Group broaden its hospitality offering in Manchester, combining its established restaurant concept with hotel bar operations, traditional pub hospitality and outdoor dining.
Opening dates and further details for the four venues will be announced in due course.
