God Save The Pizza is to open in London’s Exmouth Market on 1 September, introducing a new Roman-style pizza concept from restaurateur Roberto Costa.
The restaurant will focus on thin and crispy sourdough bases, with the concept designed around placing greater emphasis on the ingredients and toppings rather than the dough itself.
Its menu will be divided into three categories – Original, Revolution and Rebel – representing increasingly unconventional combinations.
Pizzas will be available as an eight-inch pizzetta, a 14-inch sharing pizza or a 12-inch gluten-free option, with each pizza sliced into eight pieces.
Customers will also be able to create their own pizza by selecting a base, sauce and cheese alongside up to four toppings at no additional charge.
The Original section will include ‘Italy is Born’, made with the restaurant’s marinara tomato sauce, garlic and oregano, while ‘The Queen’ combines tomato sauce, mozzarella cream, Parmesan and basil oil.
Among the Rebel pizzas will be the ‘Meat Feast’, combining beef ragù, spicy salami, red chilli and mozzarella.
Other combinations include a pizza featuring spaghetti assassina sauce and the ‘Extremist’, made with ham, cheddar, pineapple sauce and four-cheese cream.
Beyond pizza, the menu will include Spicy Lasagna, Chicken Wings with curry sauce, Beetroot Hummus with pizza bread, Meat Chilli Jacket Potatoes and Gateau Potato Croquettes with aioli.
God Save The Pizza will also introduce ‘Finish At Home’ pizza kits for customers across London.
The Exmouth Market restaurant has been designed by Maria Olivia, with interiors drawing inspiration from the steps surrounding the Shaftesbury Memorial Fountain at Piccadilly Circus and their association with London’s punk scene during the early 1980s.
Stepped seating references the setting, while graffiti-inspired colours, neon details and a takeaway window form part of the wider design.
Costa was born in Genoa and has more than 35 years of experience in hospitality.
After being involved in the launch of 14 restaurants across Italy, he moved to London and founded Macellaio RC, which has operated restaurants across London and Milan.
Costa also serves as President of the Italian Chamber of Commerce UK.

God Save The Pizza will open in Exmouth Market on 1 September 2026.
